Mango Mousse (cooked in a microwave oven)
Comment: use a 700 watt oven.
Mangoes are very sweet. Therefore, replacing them with other fruit that's not as sweet must be avoided.
Produces 6 portions.

Ingredients
2 ripe mangoes
1 pound (450 g) of sour milk cheese
4 teaspoons (20 ml) of powdered gelatin
4 tablespoons (60 ml) of water or water-lemon juice mix
A few sprigs of mint or lemon grass for decoration
6 lemon twists

Preparation
1. Peel mangoes and remove the pits. Cut the pulp in slices and purée it with the cheese, than transfer it to a bowl. Gradually sprinkle the gelatin over the liquid, stir and put in the oven uncovered for 1 to 1 1/2 minutes, at medium heat, and stir after 30 seconds. Let cool slightly.
2. Incorporate the mango purée.
3. Pour in 6 ramekins rinsed under running water of a capacity of 5/8 cup (156 ml) each. Smooth out the surface. Refrigerate for 1 to 2 hours.
4. Slide a knife along the ramekins' walls and place the mousses upside down in small desert plates.
5. Decorate with mint or lemon grass and lemon twists.
